最近看了中餐厅的综艺节目,每次都看着看着饿了,虽然只有那么几道菜,但是看着他们做出来,尤其是张亮做菜的时候似乎都能闻到香味。可能是最近这几个月没法去餐馆吃饭的原因,憋了好久的味蕾终于忍不住了,于是我下决心自己试着把手艺练起来。
第一天
准备做北京炸酱面,起因是由于晚上吃面条的时候,觉得不过瘾,想吃顿丰盛的面。菜谱都已经查好了,记录在案,但是,由于晚上回来太匆忙,没有提前泡香菇等食材,作罢。
改先做个番茄酱(为了做咕咯肉/虾准备,嘿嘿)。
1.先用深锅煮半锅水,煮水的时候准备4个番茄,在顶部划十字刀,不要切断;
2.水开,下水烫1分钟,捞起薄皮、切丁;
3.倒入豆浆机/搅碎机/果汁机,都可以哈哈,搅碎成番茄汁;
4.番茄汁倒入干净的锅里,大火煮20分钟(实际上煮了快40分钟,原因是我在放入豆浆机的时候,水太少,不给我开机!所以我狂加了2碗水);
5.煮的差不多(这个差不多真的很难说清楚,自己把握吧)的时候,关小火倒入白糖大概有大半汤勺的量、生粉水半碗(实际我用的是葛根粉,因为家里只有这个/(ㄒoㄒ)/~~)、一茶勺或两勺白醋(为了防腐,不嫌麻烦的话可以用柠檬汁)、一茶勺盐(平勺);
6.中间不停的搅动,大概再煮5分钟左右,闻到香味,而且差不多成糊状了,就可以停火了;
7.停火后,冷的过程中,它也会更稠一些。
